Paul Martin’s American Bistro is committed to using fresh, organic, locally sourced and sustainable ingredients in our dishes. One ingredient we use, especially inthewinter months is mushrooms. Gourmet Mushrooms, Inc. is certified organic, and has been a pioneer grower of exotic mushrooms for over 30 years. They were approved for organic status by the USDA by QAI in 2005.
They produce their special varieties of mushrooms by organically growing them on natural hardwood oak shavings producing healthful and flavorful mushrooms year-round. They started out as a supplier to the best chefs of San Francisco, Gourmet Mushrooms now distributes nationwide.
Exotic mushrooms offer a wide variety of flavors, textures and colors by which our chefs can expand their culinary palette and our diners’ as well. These specialty mushrooms have in common rich, savory flavors and they are natural flavor enhancers. Fresh specialty mushrooms are also high in anti-oxidants and help to support a healthy immune function.
Paul Martin’s loves the fresh, hearty, and sometimes delicate flavors mushrooms have. We use them in our Wild Mushroom Soup vegetarian with cream and three types of mushrooms, our Bistro Burger, and more of our mouthwatering dishes.
