Savoring Summer…2013 edition

Summer is a wonderful time here at Paul Martin’s American Grill. It’s Mother Nature’s time to shine and this season is bountiful indeed. Read on to find out what we have in store for you starting today

Through our partnerships with over 40 thoughtful farmstead producers, we’re able to provide the best ingredients to our dishes, like the fantastic tomatoes in our HEIRLOOM TOMATOES & BURRATA CHEESE SALAD topped with sweet basil, or the sugar snap peas and fresh papaya salsa that accompany our mesquite-grilled ALBACORE.

(Pan-roasted Local Sea Bass)

Many debates have been had over whether corn is a fruit, vegetable, or grain. No matter how you look at it, any summer-infused menu would be incomplete without this staple. Find the satisfyingly sweet taste of corn in various dishes from the creamed corn served with our PAN-ROASTED LOCAL SEA BASS or the LOCAL CORN & QUINOA CHOWDER flavored with a poblano pesto oil. Our popular FISH TACOS now have a roasted corn salsa with chili aioli and blistered tomatoes.

Over in our bar, we’ve got our GREEN & BLUE, a refreshing summer cocktail made with fresh cucumber, Bombay Sapphire gin, St. Germain liqueur, and a touch of basil. For treats of the non-alcoholic variety, our new HOUSEMADE STRAWBERRY ICE CREAM will fit the bill. We hand-select the sweetest strawberries and churn them to cold perfection with organic milk, ice, salt, and sugar.

Remember your favorite vacation: the thrill of an exotic getaway, the warmth of the sun? Our PORK CHILE VERDE ENCHILADAS are exactly that – on a plate. With slow-cooked shredded pork that we smoke in-house, tortillas made right in our kitchens, tangy tomatillos, and a touch of jalapeño, this is a departure you won’t soon forget.

We know that passions can run high when it comes to barbecue. What’s gospel in Carolina is a sin in Texas. We think we have it licked: Behold our HOUSE-SMOKED PULLED PORK SANDWICH with slow-cooked pork, slaw and sweet potato fries. Time to order a cold craft beer and raise a glass to compromise.
