Long-time Restaurateur, Anthony Smith, to Lead Restaurant Operations
(Roseville, CA) Paul Martin’s American Bistro has announced the hiring of long-time restaurateur, Anthony Smith, to lead the operations for their three California restaurants. Smith, who has over 20 years of experience in restaurant management, specializes in multi-unit operations management with expertise in marketing, purchasing and new restaurant openings.

His background in restaurant management and operations, coupled with his passion for people and personal interest in sourcing and serving fresh, health-conscious food are directly in line with Paul Martin’s philosophy and core values," said Brian Bennett, co-founder of Paul Martin’s American Bistro with fellow restaurateur, Paul Fleming.
Smith is no stranger to multi- unit restaurant management; he most recently served as the regional manager for RA Sushi Bar Restaurant headquartered in Scottsdale, Arizona, where he oversaw daily food service operations at 11 restaurants across a four-state territory. Prior to that, Smith served as general and later regional manager for Chevy’s Fresh Mex and as a division manager for Bennigans Grill and Tavern.
"My experience in the restaurant business has taught me that people are your greatest asset. I like to say we’re not in the restaurant business; we’re in the people business. Your guests and your employees, this is what the job is all about," commented Smith. "Brian and Paul share this philosophy, and I am excited to bring my experience to the table, and to apply what I know to extend this philosophy throughout the Paul Martin’s restaurant group," he added.
In his new role, Smith will oversee operations for the Paul Martin’s restaurant group which includes restaurants in Roseville, El Segundo and Irvine, California (scheduled to open this fall.)
