Who doesn’t love the lively bite of fresh blue cheese or shaved parmesan accenting their salad? Or mac and cheese made with the most flavorful cheddar? Paul Martin’s® American Bistro stays true to our mantra when we incorporate all-natural, handcrafted cheeses into our chef’s creations. Point Reyes Farmstead blue cheese is all natural, hand-crafted, certified gluten-free and kosher for dairy, making it the perfect topping for our fresh ground Nature Source Farms or Naturewell natural angus Bistro Burger. We also use artisan cheeses from Bellwether Farms in Sonoma County and Bravo Farms Cheese Factory in Traver, CA.
Each of our cheese purveyors has a long history of handcrafting some of the finest cheeses in the world, right here in California. And in the midst of all of those happy cows, we can’t forget the goats. The pioneer of goat cheese in America, Laura Chenel, established the prototype for the many successful goat cheese makers in the U.S. today. Recognizing that goats are sensitive to climate, feed and environment, Laura Chenel’s producers are located in temperate local climates to ensure the goats aren’t subject to severe weather spikes. This creates a steady supply of milk that is balanced in protein and fat which results in the exceptional freshness, flavor and texture of their chevre.
Some of Paul Martin’s® signature dishes with these delightful bites of creaminess are Spinach Dip, Butter Lettuce & Pt. Reyes Blue Cheese Salad, Three Mushroom Burger or Bistro Burger, and of course our House made Macaroni and Cheese.
To us, cheese isn’t just an afterthought each component in our dishes comes from the finest vendors who support our mission. We know cheese lovers will appreciate the quality of our creamy, flavorful handcrafted cheeses.
