Paul Martin’s American Bistro Serves Up Sustainable Wines

"Eat organic. Believe in sustainable. Buy local. Love fresh" is the mantra of Paul Martin’s American Bistro, but we don’t stop there, think: “Drink organic. Believe in sustainable.” At Paul Martin’s American Bistro we are proud to serve sustainable wines. Why sustainable wines? Because sustainable farming practices result in healthier soil, balanced grapes and higher quality wines. One of our sustainable vineyards is Parducci Wine Cellars. Parducci is family farmed, locally owned and operated in Mendocino County. They are committed to sustainable winegrowing practices, protecting the environment and supporting the community and local farmers; to be America’s “greenest” winery.

Parducci is the first carbon neutral winery in the U.S. (calculating the winery’s total climate-damaging emissions, reducing them where possible, and then taking responsibility for the remaining footprint by investing in carbon credits).  They use recycled paper for all labels, packaging, stationery, and other printed material; case boxes are made from recycled, chlorine-free corrugated cardboard. All materials are printed with soy and water-based inks. In 2008, Parducci transferred 100% of its energy needs to non-polluting, renewable sources by supplementing its on-site solar power with purchased Green-e® certified wind energy. By using 100% renewable green energy the winery is reducing its carbon footprint, investing in the development of alternative energy generation and reducing demand for power from conventional power plants, most of which are powered by coal. Parducci Wine Cellars reclaims 100% of the water used in its cellars through a system of capturing, cleaning and purifying via an on-site constructed wetlands. The treated effluent is used for vineyard irrigation and frost protection and provides habitat to wildlife in the Russian River watershed. Sustainable farming means working with, not against, nature. Parducci uses natural amendments such as animal manure and byproducts of winemaking rather than man-made fertilizers to return nutrients to the soil. Cover crops, such as clover, oats and bell beans, are planted between vineyard rows to enrich the soil and prevent erosion. Manual and mechanical methods are used instead of chemicals for weed control. Parducci encourages non-toxic methods of regulating vineyard pests by creating wildlife corridors and encouraging natural predators in the vineyard. Owl boxes provide nests for owl families that feed on vine-damaging rodents. Their sustainable farming practices are incredible!

We serve Parducci Sustainable White, it has crisp, clean aromas and flavors of citrus and melon. A refreshing, crowd-pleasing wine! Their Sustainable Red is a dry red wine characterized by robust berry flavors and spicy complexities. Come in for a glass or two! Remember at Paul Martin’s we serve a generous 7oz. glass of wine.
